Happy President’s Day from everyone at Tuckers Air Conditioning & Heating! Today we celebrate all of the great leaders that helped make our county what it is today. It is also a great time to think about ways you can help improve your community. Whatever town you live in, there are always ways you can help make it even better.  If everyone takes a little time to volunteer or help a neighbor, it can make a big difference! Remember that upgrading your HVAC system will make it more energy efficient, and making your house more green is good for everyone!

It’s an old tradition to celebrate Washington’s Birthday with cherries, in honor of the cherry tree story, so here is a recipe for some delicious cherry pie!

“You ‘ll be able to tell that this is a prize-winning recipe. The crust is flaky and buttery, the cherry filling is thick and perfectly sweetened, and there’s a lovely hint of almond extract.”

INGREDIENTS:

2 cups all-purpose flour

1 cup shortening

1/2 cup cold water

1 pinch salt

2 cups pitted sour cherries

1 1/4 cups white sugar

10 teaspoons cornstarch

1 tablespoon butter

1/4 teaspoon almond extract

DIRECTIONS:

  1. Cut the shortening into the flour and salt with the whisking blades of a stand mixer until the crumbs are pea sized. Mix in cold water. Refrigerate until chilled through. Roll out dough for a two crust pie. Line a 9 inch pie pan with pastry.
  2. Place the cherries, sugar, and cornstarch in a medium size non-aluminum saucepan. Allow the mixture to stand for 10 minutes, or until the cherries are moistened with the sugar. Bring to a boil over medium heat, stirring constantly. Lower the heat; simmer for 1 minute, or until the juices thicken and become translucent. Remove pan from heat, and stir in butter and almond extract. Pour the filling into the pie shell. Cover with top crust.
  3. Bake in a preheated 375 degree F (190 degree C) oven for 45 to 55 minutes, or until the crust is golden brown.

“When the chocolate addict in you begs for a sweet fix, bake this fluffy chocolate cheesecake over a chocolate cookie crust. Decorate it with even more cocoa delights, such as chocolate-dipped fruit or chocolate whipped cream.”

INGREDIENTS:

1 1/2 cups vanilla wafer crumbs

1/2 cup confectioners’ sugar

1/3 cup unsweetened cocoa powder

1/3 cup butter, softened

2 cups semi-sweet chocolate chips

3 (8 ounce) packages cream cheese

1 (14 ounce) can sweetened condensed

milk

4 eggs

2 teaspoons vanilla extract

DIRECTIONS:

  1. Preheat oven to 300 degrees F (150 degrees C).
  2. In a large mixing bowl, mix together crushed vanilla wafers, confectioners’ sugar, cocoa, and butter or margarine by hand. Press ingredients into a 9 inch springform pan.
  3. In the top of a double boiler, melt the chocolate chips, making sure that they are very smooth.
  4. In a large bowl, beat cream cheese until fluffy with an electric mixer. Gradually beat in condensed milk until smooth. Mix in melted chocolate, eggs, and vanilla. Beat with electric mixer on low speed until the ingredients are thoroughly blended. Pour the filling into the prepared crust.
  5. Bake at 300 degrees F (150 degrees C) for 55 minutes. The cake will seem underbaked in the center, but will continue to cook after you remove it from the oven.

Everyone here wishes you a Happy New Year! New Year’s is one of the best times to reflect on all the good things that have happened this year and make plans for the next. We hope that you are able to achieve all of your resolutions! If one of your resolutions is to be more environmentally friendly, remember that annual maintenance of your HVAC system will keep it running as efficiently as possible. And here is some New Year’s trivia to start your day: the first Time Square New Year’s Eve ball was dropped in 1907 after fireworks were banned in New York City. Today’s ball weighs nearly 12 thousand pounds and is 12 feet in diameter!

Merry Christmas everybody! Santa is delivering presents tonight and we hope you get everything you want under the Christmas tree. The holidays are all about spending time with your friends and family, we hope you have a great day full of love and laughter. To help make your Christmas as happy as it can be, here is a recipe for Whole Wheat Ginger Snaps:

Whole Wheat Ginger Snaps

“Spicy and chewy Ginger Snaps made with all whole wheat flour. Yummy!!”

INGREDIENTS:

1 cup butter or margarine

1 1/2 cups white sugar

2 eggs, beaten

1 cup molasses

4 cups whole wheat flour

1 tablespoon baking soda

2 teaspoons baking powder

1 tablespoon ground ginger

1 1/2 teaspoons ground nutmeg

1 1/2 teaspoons ground cinnamon

1 1/2 teaspoons ground cloves

1 1/2 teaspoons ground allspice

1 cup white sugar for decoration

DIRECTIONS:

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  2. In a large bowl, cream together the butter and 1 1/2 cups of sugar until smooth. Mix in the eggs, and then the molasses. Combine the whole wheat flour, baking soda, baking powder, ginger, nutmeg, cinnamon, cloves, and allspice, heaping the measures if you like a lot of spice. Stir the dry ingredients into the molasses mixture just until blended.
  3. Roll the dough into small balls, and dip the top of each ball into the remaining white sugar. Place the cookies about 2 inches apart on the cookie sheets.
  4. Bake for 10 to 15 minutes in the preheated oven, until the tops are cracked. Bake longer for crispy cookies, less time for chewy cookies. Cool on wire racks.

Happy Hanukkah to all of our Jewish friends! We hope you have an amazing Festival of Lights and enjoy spending time with your friends and family. The holidays are a great time to be thankful for all of the good things in life, and we thank you for helping our business prosper.  Since of one the traditions of Hanukkah is great food, here is a recipe for Potato Pancakes:

Potato Pancakes

“Keep this one in your recipe file because it ‘s perfect and simple Grated potatoes, a bit of onion, an egg, and enough flour to hold this masterpiece together. Shape into patties and fry to a crusty, brown crispness.”

INGREDIENTS:

4 large potatoes

1 yellow onion

1 egg, beaten

1 teaspoon salt

2 tablespoons all-purpose flour

ground black pepper to taste

2 cups vegetable oil for frying

DIRECTIONS:

  1. Finely grate potatoes with onion into a large bowl. Drain off any excess liquid.
  2. Mix in egg, salt, and black pepper. Add enough flour to make mixture thick, about 2 to 4 tablespoons all together.
  3. Turn oven to low, about 200 degrees F (95 degrees C).
  4. Heat 1/4 inch oil in the bottom of a heavy skillet over medium high heat. Drop two or three 1/4 cup mounds into hot oil, and flatten to make 1/2 inch thick pancakes. Fry, turning once, until golden brown. Transfer to paper towel lined plates to drain, and keep warm in low oven until serving time. Repeat until all potato mixture is used.

Pumpkin Gingerbread

“A delicious quick bread that will fill your kitchen with spicy holiday scents.”

INGREDIENTS:

  • 3 cups sugar
  • 1 cup vegetable oil
  • 4 eggs
  • 2/3 cup water
  • 1 (15 ounce) can pumpkin puree
  • 2 teaspoons ground ginger
  • 1 teaspoon ground allspice
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 3 1/2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon baking powder

DIRECTIONS:

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9×5 inch loaf pans.
  2. In a large mixing, combine sugar, oil and eggs; beat until smooth. Add water and beat until well blended. Stir in pumpkin, ginger, allspice cinnamon, and clove.
  3. In medium bowl, combine flour, soda, salt, and baking powder. Add dry ingredients to pumpkin mixture and blend just until all ingredients are mixed. Divide batter between prepared pans.
  4. Bake in preheated oven until toothpick comes out clean, about 1 hour.

And don’t forget that Halloween means fall is definitely here; don’t wait to get started on your fall maintenance.
